“ While I'm not vegan, we gave the Burrowing Owl a shot on a recent visit from out of town vegans came for a visit. I was very impressed. We were greeted by a vintage scene that is tasteful and creative. Vintage beer signs cover the walls, not the bright neon but soft yellow lights. The menus are recycled album covers or magazines from years ago. The food offerings from Burrowing Owl are fitting to local "bar food" with keeping vegan and non-GMO. A wide choice of beers, cocktails, and non-alcoholic drinks are available as well. The food is fantastic, the staff are approachable and kind. I've been back every week and will continue to be a patron of this establishment. It's truly unique, and it's now one of my favorite finds in COS. If you are on the fence? Hop over and have a great time. Burrowing Owl is a great place to hang out and enjoy. ”
“ Adorable, eclectic, friendly vegan spot! Don't let the word "vegan" throw you off. The food here is delicious even for us meat eaters. They have a bar as well, but also offer a nice selection of alcohol free options. My partner and I got a tasty NA beer that was quite satisfying. I got the veggie wrap with added falafel and it was huge! My first bite had me making num num sounds. My partner got the air fried chimichanga (also a large portion) and devoured it. We went the early evening of Halloween, and there were quite a few families there. Actually, the place was slammed, and I don't think the staff of three was quite enough to handle all of us. We waited for our check for a bit longer than we liked and I never got a container to take my chickpea salad home. Hoping it was just a one off from the holiday. We will for sure go back, though. Lots more menu items to try! ”

I had the spicy mac and cheese gluten-free and the taco salad, literally the best thing ever. We drove from Parker and it was worth it. The vibe is quiet, friendly, and cozy!
